Bacon Wrapped Spicy Chicken Roll Ups

1: Preheat a 10 inch skillet over medium heat.

2: Sauté the onion and jalapeño in the unsalted butter, cooking over medium low heat until caramelized.

3: Combine the cream cheese, sautéed vegetables, white cheddar, BBQ seasoning, and chives until all is incorporated.

4: Spread a generous amount of the cream cheese mixture over each pounded chicken breast.

5: Roll the chicken breast up tightly.

6: Wrap each chicken roll up in about 2-3 strips of bacon.

7: Season the wrapped roll ups with a sweet BBQ rub.

8: Place the roll ups on a smoker or grill set up for indirect heat at 250°F.

9: Cook until the chicken reaches an internal temperature of 145°F, then paint with BBQ sauce and let tack up.

10: Once the chicken reaches an internal temperature of 163°F, pull off the grill and let rest for 10 minutes.
