Bacon Wrapped Spicy Chicken Roll-ups

1: Preheat a 10-inch skillet over medium heat.

2: Sauté the onion and jalapeño in the unsalted butter until lightly caramelized.

3: Combine the cream cheese, sautéed veggies, White Cheddar, BBQ seasoning, and chives until incorporated.

4: Spread a generous amount of the cream cheese mixture over each pounded chicken breast and roll it up tightly.

5: Wrap each chicken roll-up in bacon, using 2 to 3 strips as needed.

6: Season with a sweet BBQ rub.

7: Cook on a smoker or grill set for indirect heat at 250°F.

8: Once chicken reaches an internal temperature of 145°F, paint each roll-up with BBQ sauce and let it tack up.

9: Once the internal temperature reaches 163°F, remove from grill and let rest for 10 minutes.
