BBQ Chicken Mac and Cheese

Start off by prepping the eggs and the flour for the dredge. Scramble the eggs in a separate bowl. Add the flour to a large bowl and season generously with the original bbq rub.

Next go ahead and cut the chicken breasts into bite sized pieces, then season with the sweet and savory rub and set aside. At this point, go ahead and get your pasta boiling, and the frying oil heating up to save time.

Now dredge the chicken in the eggs and then into the flour. Make sure to press the flour into the chicken. Once the oil is up to 375F degrees, start frying your chicken in batches until done and set aside.

Next add the cooked pasta to a pan along with the butter, 1/2 of your velveeta, and half of the milk. Mix over medium low heat and add the rest of the cheese and milk as needed. Also go ahead and season with sal and pepper, or more of the sweet and savory rub.

Once the Mac and cheese is almost done, go ahead and get the chicken into a bowl with a good amount of the Smokey Mountain bbq sauce and give it a good toss.

Lastly add some Mac and cheese to a wide bowl with some of that crispy bbq chicken on top. Drizzle a little more bbq sauce over the dish and garnish with some green onion. Enjoy!
