Beef Bacon Jalapeno Poppers

Preheat your oven, pellet grill, or smoker to 275F degrees.

Mix together the cream cheese, cheddar, green onions, and BBQ rub. Set aside.

Scrape all the seeds out of the jalapeno halves.

Add a good amount of the cream cheese mixture into each jalapeno half, followed by some sausage and brown sugar.

Wrap the poppers in beef bacon, ensuring most of the jalapeno is covered.

Season the bacon lightly with the BBQ rub and place the poppers on a rack.

Cook until the beef fat is almost rendered.

Optionally, brush with BBQ sauce and cook for another 30-45 minutes.
