Candied Bacon BLT

1: Start off by making the compound butter. Cut the head off of the bulb of garlic. Salt generously and drizzle with olive oil. Wrap in tinfoil and bake at 425°F.

2: Add the butter, roasted garlic, chives, and salt to a bowl and mix until well incorporated. Set in the fridge to combine.

3: Preheat your smoker, grill, or oven to your desired temperature.

4: Make six bacon weaves using half strips of bacon. Lay down 3 strips side by side vertically, fold up the middle strip, lay down a horizontal strip, and fold the vertical strip back over.

5: Fold up the 2 outside vertical strips, lay down another horizontal strip, and fold the 2 strips back down. Repeat to complete the weave.

6: Season with the bbq rub on both sides and smoke or bake until you get a nice mahogany color without burning the bacon.

7: While the bacon cooks, pull out the butter and slather both sides of the brioche pieces.

8: Toast each piece on both sides in a cast iron pan over medium heat.

9: Assemble the sandwich with the bottom slice of bread, mayo, lettuce, 3 bacon weaves, another slice of bread, and repeat to the top slice of bread.
