Cheesy Chicken Fajita Bread

Preheat your griddle to around 400F.

Season both sides of chicken thighs with 2-3 Tablespoons of Charred Chile and Lime Blend. Let sit for 15 minutes.

Cook the chicken thighs for 3-4 minutes per side on the preheated griddle.

Add 2 tablespoons of butter to the griddle, then add onions and peppers, cooking until softened and charred.

Cut the cooked chicken into cubes and add back to the griddle with the veggies and additional seasoning.

Add the american cheese and mix until fully melted. Set aside.

Thinly slice off the top of the French bread, and remove most of the interior to create a boat.

Fill the bread with the chicken mixture and smooth it out.

Top with Oaxaca cheese and a little more seasoning.

Place the loaf on the smoker or in an oven at 400F for 10-20 minutes, finishing under the broiler if desired.

Top with fresh cilantro and Mexican Crema before serving.
