Even Embers Smash Burger

1. Form the beef balls and chill in the fridge. This will help create a perfect crust.
2. Place 3 strips of bacon on a cold griddle, then turn the heat to medium. Cook and remove when done.
3. Crank the heat a few burners down from the bacon to get the griddle up to 425°F. Place the chilled beef balls on the hot griddle, top with jalapeños, and smash. Season as desired.
4. Once the meat is about 85% cooked, flip and top with cheese.
5. Slide the cooked bacon out of the way and assemble in the bacon grease. Place the bottom bun down face first and add BBQ sauce, the double patty, bacon, a couple onion rings you cooked in the air fryer, more sauce, and more cheese. Then place the top bun on upside down and smash.
6. Use a cast iron burger press to hold everything in place while the bread toasts. Flip, press again, and keep the weight on. Once the bread is toasted, it’s ready to dive in!
