Fried Onions

1: Start off by making the ranch and putting it in the fridge to thicken.

2: Slice and set aside the onions.

3: Pour the tempura mix into a bowl, adding cold beer or soda while mixing until you get a thick smooth batter (should take about 1 3/4 cup liquid).

4: Add a 1/4 cup cilantro and 2-3 minced chipotle peppers to the batter. Mix.

5: Start heating your oil to 350°F degrees.

6: While waiting for the oil, mix the onions into the batter.

7: Once the oil is ready, take big pinches of the battered onions, shake off excess batter, and slowly place them into the oil.

8: Cook until golden brown (about 5 minutes).

9: Enjoy with the Chipotle Lime Ranch!
