Migas Steak Bacon Tacos

Cut each strip of bacon in half long ways and make your bacon weave on a large sheet pan.

Cook the bacon weave at 400°F for 15 minutes or until the bacon is 3/4 of the way done.

Cut out your taco shells using whatever sized bowl you would like.

On a separate baking sheet, place 4 coffee mugs and 2 wooden or metal spoons across the mugs.

Drape one bacon circle over each spoon and gently shape into a taco shell.

Bake for 5-7 minutes at 400°F or until cooked to your liking.

To make the Migas, heat a 1/4 inch of oil in a 10 inch skillet over medium heat.

Add in the corn tortillas and cook until nice and crispy.

Crack 4 eggs right into the skillet and scramble it all together.

Season with salt and pepper to taste and add in your shredded cheese.

Assemble by adding some of the migas to a bacon taco shell, then top with pico de Gallo or salsa, cotija cheese, and Mexican crema.

 Enjoy!
