1: Roast garlic for 45 minutes at 400°F.

2: Add roasted garlic to softened butter.

3: Add parsley and 1 tablespoon of steak rub to the garlic butter mixture.

4: Use a knife to roll out the steaks flat and beat to about a quarter of an inch.

5: Spread the garlic butter on the steaks.

6: Roll the first steak up, then roll the second steak tightly around the first.

7: Tie the rolled steaks with butcher's twine and season.

8: Smoke at 275°F until the internal temperature reaches 105°F.

9: Sear the steak until the internal temperature reaches 120°F.

10: Let the steak rest for 15 minutes.
