Smoky Bacon Cheeseburger Bombs

1: Set up the griddle and turn on the smoker to a higher heat, aiming for 425°F.

2: Start cooking down the bacon until about halfway done, then move it to one side of the griddle.

3: Sear the burger patties on both sides.

4: Once the bacon is done, set it aside and cook down the onion and jalapeño until softened.

5: Add the burger patties and chop them up.

6: Add the seasoning, bacon, mustard, BBQ sauce, and Worcestershire sauce, and mix until well incorporated.

7: Cut the puff pastry into equal size squares, yielding about 9 from 1 store-bought sheet.

8: Add 2-3 heaping spoonfuls of the mixture plus 5-6 small pieces of White American cheese.

9: Fold up the pastry and shape into a ball, ensuring it's fully sealed.

10: Place on a parchment-lined sheet pan, brush with egg wash, add white and yellow cheddar on top, and smoke at 425°F for about 20-25 minutes.
