Spicy Onion Butter Smash Burger

1: Caramelize the onion and jalapeño in 4 tablespoons of butter over medium low heat for about 40 minutes.

2: Mix caramelized onion and jalapeño with a stick of butter, wrap in plastic wrap, and refrigerate.

3: Cut 12 slices of bacon in half to make 4 bacon weaves using 6 halves for each weave.

4: Top each bacon weave with brown sugar and red pepper flakes, and bake at 375°F for about 25-30 minutes.

5: Fire up the griddle to cook on high, smash each patty, season, and flip when cooked 80-90% of the way, topping with American cheese.

6: Toast the brioche buns while keeping the patties warm.
