Steak Sandwich

Start off by making the sauce.
Next put onions in a container of seasonings and buttermilk and place in the fridge.

Next, set the steak out and let it comebup to room temp. Season the staek with your favorite strak rub and sear over high heat for about 2-3 min. Dont forget to sear the sides.
Flip and add butter and 3 scored garlic cloves. Baste steak until it comes up to deaired temp. I pulled mine at 130F

Heat oil on stove top to fry onions. While you wait dredge the onions from the buttermilk in seasoned flour. Fry until golden brown.

Assemble the sandwich with toasted roll, sauce, arugula, steak, fried onions, more sauce and top. Enjoy!
